1 package Spanish Rice
1/2 onion, diced
1 clove garlic, minced
1 15 oz. can black beans
1 10 oz. pkg. frozen corn
1 tsp. chili powder
1 tsp. cumin
1 tomato diced
Cook rice according to the package directions. Saute onion and garlic in frying pan. Add black beans, corn, spices and tomato to onions and garlic. Stir in Spanish rice. Simmer for 5 minutes. Serve with corn or brown rice tortillas. We also top with guacamole.
